Maple-Pear Tea Cake
Ingredients:
2 ½ cups unbleached all-purpose flour
1 tablespoon baking powder
½ teaspoon baking soda
½ teaspoon salt
2 large pears, peeled and diced
¾ cup pure maple syrup
¼ cup firmly packed brown sugar
4 tablespoons butter, melted
1 large egg, beaten
½ cup sour cream or yogurt
1 teaspoon vanilla extract
Directions:
- Preheat the oven to 350˚F. Grease a 9- by 5-inch loaf pan and line with parchment paper.
- Sift the flour, baking powder, baking soda, and salt into a medium bowl. Add the pears, tossing them to coat with the flour. Beat together the maple syrup, brown sugar, melted butter, egg, sour cream, and vanilla in a large bowl. Stir in the flour mixture. Spoon the batter into the prepared pan and smooth the top.
- Bake for about 1 hour, until a tester inserted into the center comes out clean and the cake has begun to pull away from the sides of the pan. Cool on a wire rack for 15 minutes. Invert the cake onto the rack and finish cooling.
