Spicy Peanut Coconut Curry Dip

2 14oz cans coconut milk, regular or light
1/3 cup peanut butter
2 TB maple syrup
2 TB tamari
1/2 tsp red or green curry paste
1/4 tsp crushed red pepper flakes


Place all ingredients in a blender and blend until smooth. Taste and adjust flavors by adding more maple syrup, curry paste or red pepper flakes if needed. May be used as a dip for raw vegetables or as a sauce for noodles. Makes 2 cups.
